What is Lefay Vital Gourmet?
Lefay developed Vital Gourmet alongside its broader spa philosophy, bringing together local and seasonal produce, Italian culinary heritage and ideas drawn from traditional Chinese food culture. At Lake Garda, the original concept appeared across La Grande Limonaia and Trattoria La Vigna.
The historic announcement described sour, salty, bitter and spicy flavours through a traditional Chinese medicine framework. These associations are cultural and philosophical; they should not be interpreted as evidence that an individual dish treats, stimulates or improves a particular organ.

Matteo Maenza’s approach
Executive Chef Matteo Maenza translates the philosophy into contemporary Italian cooking shaped by seasonality, landscape and balance. He remains Executive Chef of the Lefay group and leads the Michelin-starred Grual Restaurant at Lefay Resort & SPA Dolomiti.
An early example menu paired grilled white asparagus with braised chicory; hummus with tuna, sun-dried tomatoes and sesame; turkey roulades with bulgur, pineapple, coriander and Espelette chilli; and a pink-grapefruit granita. It is an archive illustration rather than a current menu.
